Oryx Green Chile Stew in a Dutch Oven
Did you ever wonder why big game hunting is allowed in New Mexico? Because it helps control the animal population and prevents crop damage on the many family owned farms in New Mexico. So what do you do with the elk, deer, antelope or oryx after the hunt? Make a great dinner of course. Here is a great recipe for Oryx Green Chile Stew.
Ingredients:
2 tablespoons of Cooking Oil
1 pound of cubed Oryx Meat
1 cup of Chopped Onion
2 large Potatoes cubed
2 small cans of Green Chile
1 small can of Diced Tomatoes
2 cups of Water
1 tablespoon of Garlic Powder
1 tablespoon of Onion Powder
Cooking Directions:
Using the Cooking Oil Brown Oryx Meat and onions in the Dutch Oven and simmer for 5 minutes. Add Potato, Green Chile, Diced Tomato, Water to pot and cook for 1 hour. The last 5 minutes add Garlic and Onion Powder to taste.
